Barrell Dovetail Bourbon

A Moment In Wine Show 419  –  Barrell Dovetail Bourbon

Today we are going a little outside of our normal wine tastings, because of the cooler weather and beautiful fall outside, I thought it would be nice to have an after dinner bourbon.

We’re tasting the Barrell brand Dovetail Bourbon.   Bourbon is specifically spirits that have been distilled from corn.   Most of our bourbon distillers are from Tennessee and Kentucky, with a few sprinkled in the north.  Barrell Dovetail Bourbon is different in that it is a blend of whisky finished at the prestigious Dunn Vineyards Cabernet barrels and an 11 –year old bourbon finished in black strap rum casks.

Barrell Dovetail Bourbon is 124 proof, which is a little hotter and higher in proof than your average bourbon.  This translates to roughly about 62% alcohol.

The color in the glass is a beautiful dark gold honey color.  The nose is sweet, raisin smell, hint of anise and definitely molasses from that aging in the black strap casks.

The mouth coating is soft, creamy, caramel and a note of charcoal.  The finish tastes like toasted marshmallows, dark fruits and a little pepper.

This would be nice sipping around the fireplace on a nice, dark crisp fall evening.

About Fred Tregaskis & Summit Wine Cellars

Fred Tregaskis first developed a passion for wine during his art school years, when he worked in the New York’s Hudson Valley vineyards. Years later, after working for a national wine magazine, he was given the opportunity to design and build a 28,000-bottle cellar for Lespinasse Restaurant at the St. Regis Hotel in New York—and in the process Summit Wine Cellars took root.

Tregaskis and Summit Wine Cellars have created dramatic custom wine cellars for clients throughout the world, from Maine to California, and Bangalore to Buenos Aries.

Tregaskis also writes about wine, conducts tastings and hosts a radio show on wine for NPR station WHDD/Robin Hood Radio based in Sharon Conn.
